Spices, in particular, go by many names. Some of the Thai spices you&#8217;ll find are indigenous to the region an you may not be familiar with them, but they&#8217;re what make the food so great.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-220 alignright\" src=\"http:\/\/first2board.com\/explorationsguru\/files\/2015\/09\/Screen-Shot-2015-09-21-at-10.15.56-PM.png\" alt=\"Thai Spices\" width=\"454\" height=\"370\" srcset=\"http:\/\/first2board.com\/explorationsguru\/wp-content\/uploads\/sites\/70\/\/sites\/70\/2015\/09\/Screen-Shot-2015-09-21-at-10.15.56-PM.png 454w, http:\/\/first2board.com\/explorationsguru\/wp-content\/uploads\/sites\/70\/\/sites\/70\/2015\/09\/Screen-Shot-2015-09-21-at-10.15.56-PM-300x244.png 300w\" sizes=\"(max-width: 454px) 100vw, 454px\" \/><\/p>\n<p>When learning some Thai, you should be aware that there are 5 ways to pronounce each letter (making it one of the more complicated languages to learn and speak.) \u00a0So, one word could have 5 meanings depending on the vowels used. \u00a0Sometimes the pronunciation difference is ever so slight. \u00a0For example, the word Soi (Soy) pronounced slightly differently can mean street or it can mean cow. \u00a0I spent several days with my client in Thailand trying to figure out the difference between the pronunciation and never could get it. \u00a0While they always giggled at my pronunciation, they really appreciated that I tried so hard. \u00a0 So, I&#8217;ve tried to use phonetic spellings below to best represent how we might pronounce the word or how it may sound to you.<\/p>\n<p>Before you go, here&#8217;s what you should know.<\/p>\n<p>Spices:<\/p>\n<p>One of my favorites,\u00a0\u0e02\u0e48\u0e32 (pronounced Kha) is also called\u00a0galangal (a root similar to ginger) and is used in many dishes, especially soups.<\/p>\n<p>\u0e43\u0e1a\u0e21\u0e30\u0e01\u0e23\u0e39\u0e14 (Bai Makrut) or kaffir lime leaves, are used in soups, curries, or chopped finely into meat dishes like larb. Don&#8217;t eat a whole leaf. If you love kaffir lime leaves, buy them in Thailand where they&#8217;re much less expensive. (just keep them in their original packaging so you don&#8217;t run into issues at customs)<\/p>\n<div id=\"attachment_222\" style=\"width: 508px\" class=\"wp-caption aligncenter\"><img aria-describedby=\"caption-attachment-222\" decoding=\"async\" loading=\"lazy\" class=\"wp-image-222 size-full\" src=\"http:\/\/first2board.com\/explorationsguru\/files\/2015\/09\/Screen-Shot-2015-09-21-at-10.16.58-PM.png\" alt=\"Thai Spice Kaffir Lime and Galangal\" width=\"498\" height=\"402\" srcset=\"http:\/\/first2board.com\/explorationsguru\/wp-content\/uploads\/sites\/70\/\/sites\/70\/2015\/09\/Screen-Shot-2015-09-21-at-10.16.58-PM.png 498w, http:\/\/first2board.com\/explorationsguru\/wp-content\/uploads\/sites\/70\/\/sites\/70\/2015\/09\/Screen-Shot-2015-09-21-at-10.16.58-PM-300x242.png 300w\" sizes=\"(max-width: 498px) 100vw, 498px\" \/><p id=\"caption-attachment-222\" class=\"wp-caption-text\">Kaffir Lime and Galangal<\/p><\/div>\n<p>\u0e02\u0e34\u0e07 (Khing) or ginger, is used in a lot of stir fry dishes.<\/p>\n<p>\u0e43\u0e1a\u0e22\u0e48\u0e32\u0e19\u0e32\u0e07 (Bai toei) or pandan leaves, are very common in the region. Pandan leaves are often wrapped around beef, chicken or other foods and deep fried. \u00a0They&#8217;re edible when cooked.<\/p>\n<p>\u0e15\u0e30\u0e44\u0e04\u0e23\u0e49 (Takhrai) or lemongrass, is much more recognized than some other spices, and is a highly used spice\/herb. Lemongrass is not edible, but adds great flavor to food and drinks. \u00a0I love lemongrass flavored tea both iced and hot. Lemongrass is a key ingredient in Tom Yam soup.<\/p>\n<p>\u0e1e\u0e23\u0e34\u0e01\u0e02\u0e35\u0e49\u0e2b\u0e19\u0e39 (Phrik khi nu) or Chili \u00a0is literally translated as\u00a0mouth-dropping chili. Chili is a very common spice used throughout South East Asia and Thai Chili is very spicy. \u00a0Consume at your own risk!<\/p>\n<div id=\"attachment_221\" style=\"width: 548px\" class=\"wp-caption aligncenter\"><img aria-describedby=\"caption-attachment-221\" decoding=\"async\" loading=\"lazy\" class=\"wp-image-221 size-full\" src=\"http:\/\/first2board.com\/explorationsguru\/files\/2015\/09\/Screen-Shot-2015-09-21-at-10.16.22-PM.png\" alt=\"Thai Chili\" width=\"538\" height=\"403\" srcset=\"http:\/\/first2board.com\/explorationsguru\/wp-content\/uploads\/sites\/70\/\/sites\/70\/2015\/09\/Screen-Shot-2015-09-21-at-10.16.22-PM.png 538w, http:\/\/first2board.com\/explorationsguru\/wp-content\/uploads\/sites\/70\/\/sites\/70\/2015\/09\/Screen-Shot-2015-09-21-at-10.16.22-PM-300x225.png 300w\" sizes=\"(max-width: 538px) 100vw, 538px\" \/><p id=\"caption-attachment-221\" class=\"wp-caption-text\">Thai Chilis<\/p><\/div>\n<p>You should also be familiar with a few pastes\/condiments that are frequently used and include many of the favorite Thai spices:<\/p>\n<p>\u0e01\u0e30\u0e1b\u0e34 (Kapi) or shrimp paste can be smelled a mile away. It&#8217;s made by\u00a0fermenting ground shrimp and salt. It is used to add flavor to many dishes.<\/p>\n<p>\u0e19\u0e49\u0e33\u0e1b\u0e25\u0e32 \u00a0(Nam pla) or fish sauce is used extensively in Thai cooking. You&#8217;ll also recognize the smell, but depending on its use, you may not notice the flavor. \u00a0Believe it or not, there&#8217;s a more pungent version of fish sauce called Pla Ra or\u00a0\u0e1b\u0e25\u0e32\u0e23\u0e49\u0e32 and one smell of that will send your senses into overdrive. \u00a0Fish Sauce is used to add saltiness flavor to most soup bases and many other dishes.<\/p>\n<p>\u0e0b\u0e35\u0e2d\u0e34\u0e49\u0e27\u0e14\u0e33 or\u00a0\u0e0b\u0e35\u0e2d\u0e34\u0e49\u0e27\u0e02\u0e32\u0e27 (Si-io dam or\u00a0Si-io khao) is soy sauce! The first is dark soy and second is light soy and it&#8217;s pronounced (soya dam or soya cow). \u00a0Soy sauce is also commonly used throughout Thailand.<\/p>\n<p>&nbsp;<\/p>\n<div id=\"attachment_219\" style=\"width: 424px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/first2board.com\/explorationsguru\/files\/2015\/09\/Screen-Shot-2015-09-21-at-10.15.08-PM.png\"><img aria-describedby=\"caption-attachment-219\" decoding=\"async\" loading=\"lazy\" class=\"wp-image-219 size-full\" src=\"http:\/\/first2board.com\/explorationsguru\/files\/2015\/09\/Screen-Shot-2015-09-21-at-10.15.08-PM.png\" alt=\"Thai condiments \" width=\"414\" height=\"411\" srcset=\"http:\/\/first2board.com\/explorationsguru\/wp-content\/uploads\/sites\/70\/\/sites\/70\/2015\/09\/Screen-Shot-2015-09-21-at-10.15.08-PM.png 414w, http:\/\/first2board.com\/explorationsguru\/wp-content\/uploads\/sites\/70\/\/sites\/70\/2015\/09\/Screen-Shot-2015-09-21-at-10.15.08-PM-150x150.png 150w, http:\/\/first2board.com\/explorationsguru\/wp-content\/uploads\/sites\/70\/\/sites\/70\/2015\/09\/Screen-Shot-2015-09-21-at-10.15.08-PM-300x298.png 300w\" sizes=\"(max-width: 414px) 100vw, 414px\" \/><\/a><p id=\"caption-attachment-219\" class=\"wp-caption-text\">Thai condiments<\/p><\/div>\n<p>Other staples:<\/p>\n<p>\u0e21\u0e30\u0e19\u0e32\u0e27 (Manao) &#8211; a very common fruit yet many\u00a0of the locals will not know it by its English name, lime. Thai&#8217;s serve lime with almost every noodle and rice dish and you may find yourself asking for more manao (pronounced man ow)<\/p>\n<p>\u0e1d\u0e23\u0e31\u0e48\u0e07\u00a0(fah rang) &#8211; Farang &#8211; besides a derogatory slang word \u00a0to refer to &#8220;white&#8221; tourists, and the name of a defunct Thailand Ice Hockey Team (yeah, I had no idea there was Ice Hockey in Thailand either), farang is what we call\u00a0guava.<\/p>\n<p>\u0e02\u0e49\u0e32\u0e27 (cow) &#8211; Khao &#8211; you might be familiar with the word Khao because it&#8217;s common in may city names (Khao Lak for example).
