A Little Bit of Thailand Semi-Homemade

If you watch the food channels, you’re probably familiar with the concept of semi-homemade. Take something from a box and add a little bit of this and a little bit of that and poof…it’s semi-homemade.

When I go to Thailand, it’s usually for weeks at a time – up to three months! By the time I head back to states, I’m usually ready to ditch the Thai food for…well, anything else.  But then, a few weeks – or even days – after being home I crave my favorite Thai.  Now, if you don’t live in a city with access to tons of Thai food, finding something authentic can be rough.

So here’s what I do now.  I order Tom Yum Soup online and I fix it up.  It took a ton of trail and error before I found a brand that I liked.  I have finally found one that I not only like, but I love once it’s semi-homemade.  Annie Chun’s Tom Yum bowls are great!  I order them in bulk from Amazon. Here’s a photo of my last order.

In addition to the Tom Yum Soup bowls, I also order Kaffir Lime and Lemongrass.  Now, if you have the opportunity to buy Kaffir Lime at a market of some sort or in Thailand, I highly suggest you do – the grocery store prices are expensive.

To make the soup here’s what I do.

1. Open the package and fill the bowl with hot water. Put the noodles in the hot water for about a minute to soften them.

2. Drain all the water from the noodles and set the noodles on the lid.

3. Before opening the silver flavour packet, crush it up.

4. Fill the bowl with hot water, add the contents of the sliver packet along with the sauce packet.  Add Kaffir Lime and Lemongrass to taste.

5. Add the noodles by breaking them up into smaller pieces.

6. Cover loosely with the lid and microwave for about 1 min 30 seconds
